Usually when I run the module I have the switch happens at night while everyone is sleeping in the Golden Court. That way the decision to accept bribes is the character's and not the doppelgänger's. However, like Dean, I don't think it hugely matters as long as the doppelgänger in place before they enter the tunnel.
My two cents
PS - I also try to have the party meet the replaced PC back at the Golden Court. I "suggest" to the replaced character they pause in a Courtyard for a moment to reflect before catching up with the party at a debrief. The other PCs then meet the real "just woke up" PC who is shaking off a hangover and the effects of having been heavily drugged into unconsciousness. If the PCs run back to the courtyard the doppelgänger is already long gone.
When it works well, it works really well. I love leaving people with a "WTF?!?" moment.
